Chimichurri Grilled Pork Loin with Curry Couscous
Try this delicious pork loin recipe for two with our signature chimichurri!
Ingredients:
1 tbsp Vigorón Cacao chimichurri
1 lb pork loin
6 tbsp curry powder
1 tsbp cumin
1 cup pearl couscous
1 medium carrot diced
1 celery stick diced
2 garlic cloved minced
2 tbsp canola oil
1/2 stick butter
1/2 cup heavy cream
Salt & pepper to taste
How to:
Marinate your pork in the heavy cream with 2 tbsp of curry powder. Leave it overnight. Take a large pan and set to med-high heat and add the oil. Before setting your pork add salt and pepper to both sides, then sear until you get a golden color. Add the marinade to create a cream, cook for a few minutes. Then remove with the sauce and set aside.
Add your butter to the pan and lower to med heat. Then add your vegetables. Meanwhile set a pot with salted water to boil. Once boiling add the couscous (check your packaging for instructions on how long to cook). Cook your vegetables in the butter then add the rest of the spices and salt. Add the sauce from the pork, and a bit of cooking water from the couscous.
Once your couscous is ready, strain and add it to the pan with your vegetables. Cook until most of the water has evaporated you want it to be fluffy. Plate your curry couscous, then add your pork loin, and top if off with Vigorón Cacao Chimichurri for the final touch!
