How it All Started

I grew up side by side with my Abuelita, watching her cook with love and intuition. She taught me to trust my senses—to let taste, smell, and tradition guide me in creating something truly special. To her, the greatest gift you could share was a meal, and that belief shaped my lifelong passion for cooking.

Inspired by those cherished Nicaraguan recipes, I’ve spent years blending the flavors of my heritage with influences from my travels. After a decade in Miami, a city bursting with culture and global culinary inspiration, I knew it was time to take my passion to the next level.

Coming from a family of entrepreneurs, launching my own business was always the dream. With a business and marketing degree from The George Washington University and years of experience in marketing, sales, and finance, I was ready to create something of my own—something that felt deeply personal.

And that’s how Vigorón Cacao came to life—a perfect mix of my love for food, my roots, and my skills, all blended into one vision.

What’s in a Name?

So, what does Vigorón Cacao mean? It’s more than just a name—it’s a nod to the heart of Nicaraguan culinary culture, bringing together two traditional staples that complement each other like a burger and shake.

Vigorón is a bold and satisfying dish made with soft-boiled yucca, crispy pork rinds, and fresh coleslaw. The name comes from the word “vigor,” because it’s meant to fuel and energize you for the day ahead. Like Vigorón, our sauces are invigorating,

crafted to bring fresh and vibrant flavors to every meal. Cacao, on the other hand, is Nicaraguan-style horchata—a rich and refreshing drink that, despite its name, is made with more than just cacao beans. Cacao has deep roots in Mesoamerican history, once considered a symbol of wealth in ancient times. Even the scientific name for cacao translates to "food of the gods" in Greek, a fitting tribute to its revered place in culture.
